baking question - did I ruin it?

I'm making cupcakes from scratch for DS's party tomorrow.

I guess I didn't let the butter come to room temperature, and now the batter is lumpy with butter chunks. It's the consistency of cottage cheese.

Do I just bake it like that or how do I fix it? If I let it warm up a little, will the chunks go away?

  • I'd give it some time and try again.  DON'T overbeat it, or they will get chewy and stiff.

  • Let it sit and warm up and then mix lightly once it has warmed up. You might be find just baking them, I have done it before and never noticed a problem as long as it's really small pieces and not huge chunks.

    I let it warm up a little and remixed. It was still chunky, but it seems like they're turning out great.
