There's an Oregon winery called Noble Pig Winery that has the most amazing recipe/cooking site, ever. Do a Google search for "Noble Pig" and "macaroni and cheese" and about five recipes come up that they've had on their blog. AMAZING. All. Of. Them. :-)
4-5 c. cooked, drained pasta (2-2.5 c. uncooked) 3 c. grated cheese 3 eggs, beaten 3/4 c. sour cream 3/4 stick of butter, cut into chunks 1 tsp. salt 1 c. milk 1 Tbsp. sugar
Preheat oven to 350. Add cheese to cooked pasta while it's still hot. Combine the remaining ingredients in a separate bowl, then add to pasta and cheese. Pour into a casserole dish and bake 30-45 minutes. Top with additional cheese, then broil for a few minutes
I once made it with yogurt because I didn't realize that I was out of sour cream when I was at the store. We actually liked it better, and it's a little better for you. I also cut back on the amount of butter. If I have bread crumbs on hand, I sprinkle some on top before broiling the mac and cheese; it gives it a nice crust.
I like to serve it as a main dish, but with a fancy salad as the side: baby spinach or bagged salad, with dried cranberries, nuts, gorgonzola, chopped green apple, and raspberry vinaigrette. The crisp, tart, tangy salad goes great with the gooey, cheesy mac and cheese!
I know it is a lil lengthy but oh.my.gosh it is sooooo worth it!!!
ingredients: 2 shallots- chopped3 cloves of garlic- chopped1 teaspoon olive oil2 tablespoons flour4 cups heavy whipping cream1 teaspoon thyme (dried or fresh)8 oz pepper jack cheese- shredded8 oz sharp cheddar cheese- shredded16 oz Velveeta cheese- cubedSalt to tastePepper to tasteHot Sauce to taste1 pound of elbow macaroni- cooked1 cup Panko bread crumbs4 tbsp melted butter2-3 tbsp chopped parsley (dried or fresh) directions: Preheat oven to 350.In a stockpot, add olive oil and chopped shallots, cook over low heat until clear.Add garlic and stir for 1 minute until golden brown.Add 2 tbsp of flour and stir.Whisk in heavy whipping cream and thyme and reduce by one-third (I usually just let it go for 20 minutes....stir continuously)Stir in cheeses until melted, creamy and thickened.Add salt, pepper and hot sauce to tasteRemove from heat and stir into pastaLet pasta sit and stir every few minutes until cheese becomes stiff and pastyPlace in a 9x12 casserole dishMix together Panko, parsley and butter and crumble on top of mac n cheese.Bake covered until bubbling on edges (approx. 35 minutes).
Once Mac n Cheese is bubbling, uncover and place under broiler until topping becomes browned and crisp!!

I like all of the Ina Garten versions on foodnetwork.com. They aren't light dishes, by any means, but damn are they good.
I love this recipe:
for a 13 x 9 pan
1 lb penne pasta
2 14-15oz cans stewed tomatoes
1 1/2 cups heavy cream
16 oz shredded cheddar
Preheat oven 375
cook pasta - butter baking dish
coarsely chop the tomatoes - reserve the liquid
toss cooked pasta with tomatoes, reserved liquid, cream, about 3/4 of the cheese, 1 tsp salt and 1/2 tsp pepper
put in baking dish
sprinkle with remaining cheese
bake 40-45 minutes until jices are absorbed and top is golden

Its not quite the same as regular, but still tasty. Also, we've had the new Kraft Mac & Cheese that comes in a bag - pretty good!
3 tablespoons butter
3 tablespoons flour
2 cups of cheddar
1 cup of smokey gouda
3 cups of milk
2 cups of pasta
Combine butter and flour over medium heat
Add milk and cheeses
Stir until it thickens
Add pasta
Bake in a 350 degree oven for 20-25 minutes
You can also add chicken and broccoli to it as well. YUM!

My favorite recipe....
1) Boil water in saucepan with handful of salt
2) Poor in box of noodles
3) Cook stirring occasionally
4) Drain
5) Add cheese packet
6) Stir until mixed through
7) Enjoy
