So, DH has looked around his work and told me last night that for the next 2 weeks+ he will be going in early almost every single day. And when I say early, I mean yesterday and today he went in at 3 a.m. (his normal work time is 6 a.m. to 3 p.m.). Lizzie and I don't get up til six or seven. I was wanting to find a good breakfast casserole recipe that I can make for him to warm up on his way out the door...any ideas?

We've done this one before & everyone loves it. We switch it up with the ham, sausage, & bacon.

We've also done breakfast pizza too, I just buy a premade dough ball & throw the same stuff on top. Kids really love that.
We've also done breakfast burritos with home fries tossed in. All of them reheat well as long as you store them correctly.

I made this for Christmas breakfast, can't tell you if it reheats well, the 6 adults destroyed it. Sausage Strata I added some minced onion, pepper, etc for more flavor.
If you have egg rings I've made egg sandwiches ahead using scrambled eggs in the egg rings, cooking canadian bacon (round about the size of an english muffin) and english muffins, with american cheese. They reheat ok.
I've also made basically this breakfast casserole, except make it in a 9x13 and have the crescent "crust" about 1/2" up the sides. crescent casserole This one I make for just DH and I on a Sunday then reheat it for breakfast the next couple days.

I've made this one for a party and it reheats well:
Sausage Breakfast Casserole
Serves: 8 (large portions)
Cook Time: 1 Hour (refrigerate overnight)
Ingredients
1 lb. Smithfield Smoked Sausage, diced (can substitute 1 lb ground sausage, cooked, crumbled & drained)
5 pieces thick-sliced white bread, with crust, buttered and cubed
4 eggs
2 cups milk
1 teaspoon dry mustard
1 teaspoon salt
1 teaspoon hot sauce
3 cups grated extra-sharp cheddar cheese
Steps
Spray a 1 1/2 quart casserole dish with vegetable oil cooking spray. Place the bread cubes in the dish. Evenly distribute the sausage over the bread cubes.
Combine the eggs and half the milk in a separate bowl and whisk together. Add remaining milk, mustard, salt, and hot sauce and mix well. Pour the egg mixture over the bread. Cover with plastic wrap and refrigerate overnight.
The next morning, remove the casserole from the refrigerator and allow it to sit on the counter for 15 minutes while you preheat the oven to 350 degrees F. Remove the plastic wrap. Sprinkle cheese evenly on top of the casserole. Place it in the oven and bake uncovered for 1 hour.
One more that I do a lot and they freeze and reheat very well:
Sausage Egg & Cheese Biscuit Muffins
Put 1 refrigerated biscuit into each of 10 muffin cups which have been sprayed with Pam. Cook according to temp on package for 5-6 minutes. Remove from oven and immediately press the back of a spoon into the biscuits to make a cup.
Meanwhile, brown & drain 8 oz sausage. Divide the sausage evenly among the cups.
Beat 3 eggs with a splash of milk and distribute over tops of cups. Sprinkle evenly with 1/2 cup cheddar cheese.
Return cups to oven and bake an additional 6-8 minutes or until eggs are set. Let cool and refrigerate or freeze until needed. Thaw in fridge overnight and heat in microwave.
Not a casserole, but I love sausage balls. They are always a hit, they make a ton, and couldn't be any easier to make!
1 lb. Jimmy Dean sausage (regular or hot)
2 cups Bisquick
2 cups shredded cheddar cheese
milk to moisten
Mix together and roll into balls. Bake at 350 for about 20 minutes.
OMG, I love those things and haven't had them in years! Off to put those ingredients on my grocery list for this weekend...
I am snickering, because I would tell my FI two words: Pop tarts.

Breakfast Cassarole
2 1/2 cups seasoned croutons
1 lb. sausage roll
4 eggs
2 1/4 cups milk
1 10-oz. can condensed cream of mushroom soup
1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry 1 4-oz. can mushrooms, drained and chopped
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
1/4 tsp dry mustard
Spread croutons on bottom of baking dish. Crumble sausage in a skillet. Cook until browned, stirring occasionally. Drain off grease. Spread sausage over croutons.
Whisk eggs and milk until blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour mixture over sausage and croutons. Refrigerate overnight.
Preheat oven to 325 degrees F. Grease a 13"x9" baking dish. Bake casserole for 50-55 minutes, or until set and lightly browned.
This is really yummy - it also makes a lot!

Sausage Egg Bake
1. 10 eggs
2. 10 slices of whole wheat bread decrusted and cubed
3. butter
4. Jimmy Dean Breakfast Sausage
5. 1 bag of pre-washed spinach
6. shredded cheddar cheese
? cook sausage
? butter baking dish
? add cubed whole wheat bread
? top bread with cook sausage, spinach and cheese
? evenly pour eggs over everything
? put in fridge over night
? preheat oven at 350 and bake for 30-35 minutes or until eggs are thoroughly cooked
I make a yummy Veggie Egg Bake that does reheat well...
9 x 13 pan
12 eggs
8 hash browns
Milk
Veggies (fresh spinach, tomato, mushroom, green pepper)
Cheese (American)
Salt / pepper
Bake hash browns until done. Cool.
Saut? mushrooms and green peppers until soft.
Remove from pan. Add spinach to pan to soften.
Remove from pan.
Crack eggs into bowl. Mix in Milk. Add in veggies / salt and pepper. MIX WELL.
Place hash browns in greased pan. Pour egg/veggie mixture over top.
Cover; Let sit over night in fridge.
Preheat oven to 400 degrees.
Place in oven. Cook until knife pulls out clean (30-50 minutes)
Top with cheese; serve.
You can use whatever veggies you want. Some people use meat too, just cook it first!
