What we do is make a mexican-ish dinner! Super simple, and way good.
Chop of the chicken and remove all bones. Put in a saucepan with a packet of taco seasoning, and whatever water the packet says. Cook till heated through, and the juices all soaked in.
Take a cup of rice, and brown it in a pot with a little bit of oil. Add two small cans of tomato sauce and stir so it becomes a paste. Pour in two cups of chicken stock, or vegetable, and heat till a boil. Reduce to a simmer, and cook till all the liquid is gone.
Put both on a tortilla, with some sour cream and slices of avocado!
I do chicken salad with whatever I have on hand--green onions, celery, almonds, grapes--it's different every time. Then I use the bones to make chicken stock and use that to make soup or risotto.
We had pulled chicken sandwiches for dinner tonight. They were really good! We just put the shredded chicken we had in a saucepan with BBQ sauce (Sweet Baby Rays....the best!) and heated it up. We spooned it on toasted hamburger buns and topped with shredded cheddar cheese. Not at all fancy, but it hit the spot and was super easy.
Whatever you do don't throw out the carcass. Throw it in a pot with carrots, celery and onion and make a big put of stock. Freeze it for future use. Way better than anything you get from a can

Chicken tortilla soup
1. Shred chicken like you would make pulled pork (works especially well with dark meat but I use it all.)
2. Melt butter in a skillet. Add a bit of ground mustard if you have it.
3. Toss in chicken.
4. Add Worcestershire sauce to taste. Lots is best.
5. Brown until it starts to get golden and crispy.
6. Serve with more Worcestershire if you want. Lots is still best.
7. Be sad you didn't have more leftover chicken because this recipe $@#ing rules.
