My poor Nana is probably rolling over in her grave, but I did not make the pesto.  I had bought a container of Bertolli basil pesto to make this grilled chicken recipe over the weekend (which was delish and I can share the recipe if you like).  We had plenty pesto left over so I just threw it on some pasta tonight.  With that being said, my mom makes awesome basil pesto and she has given me her recipe.  I just didn't want to hassle with making it on Sat.

She doesn't measure anything, but these are the approx measurements she gave me.....

1/4 cup toasted pine nuts, 1 packed cup fresh basil, 1 clove garlic, 1/3-1/2 cup EVOO, salt, pepper

Whirl all that in food processor.  Then add in 1/4 cup grated parm cheese.  It should be moist.  If not, add more EVOO.

FWIW....the Bertolli stuff was pretty good too.  Smile

  • Butting in-- we use the kroger brand pesto when I make our gourmet grilled cheeses and its great! Last time I checked it was slightly cheaper than the Bertolli and is located near all the kroger brand prepared soups and pastas and sandwiches.
