What did you have for dinner last night?

We had my brother/SIL and Sister/BIL over for navajo tacos. So good.

What are you having tonight?

Re: What did you have for dinner last night?

  • Nothing. Tonight we are having chicken enchiladas.

  • I made a ham last night, so we had that with roasted potatoes and steamed sugar snap peas.

Tonight is ham & swiss on baguette. I just put it under the broiler so it is toasty and the cheese melts. Will probably serve with a salad.

ETA: We wouldn't normally have ham twice in a row but I want to use up some of the leftovers because we are leaving on vacation.

  • Last night I roasted a chicken and had rice and veggies with it.

Tonight, I don't know. DH is working super late and I don't feel like cooking. Given that it's already 3pm, I need to get on the stick.

  • Last night - breakfast!

Tonight - whatever DH decides to cook. He is working from home for the afternoon, so I put him in charge since he will be home first.

  • Last night, we had fried egg sandwiches and the kids had grilled cheese (Ash Wednesday, so no meat) with a variety of fresh fruits and veggies.

Tonight?  No idea.  But I need to figure something out.

I normally use a buttermilk dough recipe but, I didn't have any buttermilk. I think any basic dough recipe would work.

    2 cups warm water

    1T yeast

    1t salt

    1/3 C sugar

    half of 1/3 C canola oil (I did 3T)

    5Cups flour.

Mix the first 5 ingredents and then add the flour 1 cup at a time. Mix until smooth, I used my kitchen aid. Let raise for 1 hr and then punch down make into small flat circles and fry in canola oil.

We but chili, lettuce, cheese, salsa over the top.

For dessert sprinkle them with powdered sugar/honey.

  • Tortilla soup last night. Tonight will be some type of take out because I have DS's gym class then a play date (and dinner for DS) at a friend's house so we won't get home until DS's bedtime.

  • Last night we had home-made pizzas with store bought everything - dough, sauce, etc.  I was exhausted.

Tonight we're having tacos b/c DD#1 requested it and it's quick and easy.  My mom is here from FL so I wanted something fast so I didn't have to spend all the day cooking.
