Let me tell you about our girls and then tell us when we should start.
They were born at 34.3 weeks weighing 2, 12 and 3, 10- due to IUGR. They didn't have any issues other then being growers and feeders. They are doing great 5 months later and weighing in at 10, 2 and 10, 10. They have been slow to gain but doc was never worried b/c they have gained well. They eat b/w 4-5 ounces of enfamil (premature formula) every 3 hours during the day and then one 2 ounce bottle in the night.
They aren't sitting up at all, but they can roll from back to front and fron to back, they laugh, giggle and developmentally do everythign they should. They can hold their head very well- not completed unassisted but super good!
When should we start jar food? We tried cereal at 4 months and they just hated it so it didn't seem worth it- however, they did understand putting the spoon in mouth and eating off of it.

Depending on the area the recomendations are different- I'm from Canada and it seems to differ a lot from the US in my province they suggest 6 months to start cereals and go from there...so I waited until they were 6 months to begin any food other than nursing.
