Tomorrow we are taking lunch to my cousin and his wife who just had their 1st baby and for some reason I am drawing a blank on what to make. I'd like something easy and portable (crock pot or something I can just throw in the oven). Any ideas for a yummy recipe, they aren't picky!

What about about soup in the crockpot and a nice loaf of crusty bread?
I make a lot of different soups that you just dump everything into the crockpot and let it go... Bean soup with ham, chicken and wild rice soup, vegetable beef, etc.

My go-to easy meal is Crockpot Chicken Salsa. One lb. (or more) of skinless, boneless chicken; one jar of salsa (at least 16 oz.); taco seasoning and 1/2 of water. Put everything in the crockpot and cook on low for six-plus hours or on high for four hours. Remove the chicken and shred with two forks, then put back in the crockpot and serve!
You can eat it with tortilla chips, in a wrap, over a salad. It always goes over well at our house.
