Bed rest mamas - What do you do for lunch?

I was just put on bedrest for at least a week and we are trying to think of easy meals that I can put together for lunch so that DH can go to the grocery store.  I was told that I can get up to go to the bathroom, shower and make lunch, but it can't be anything that takes too long.

 Any suggestions?  Thank you!!

  • Normally I opt for cereal and milk or a sandwich, but today my secretary called and said he's bringing me thai food!  I've had a major craving for green curry and thai iced tea.  Very excited.  This is definitely a special occasion (yesterday was cereal and milk).

  • I'm eating microwave Kashi and Amy's Organic meals and any other left overs that I can heat up.   Big Smile
  • We keep the freezer stocked with some easy microwave stuff, but a lot of times, we plan enough dinner to have leftovers that I can heat up the next day.
    On bed rest since Groundhog's Day and every day since has been exactly the same.

  • I primarily eat dinner leftovers, sandwiches, and soup for lunch.

  • I think a lot of the ease comes with the prep. So if your H can prep some things the night before, you can just plate it and microwave, if necessary, then eat.

    Some suggestions:

    Hummus dip with pita chips or pita bread

    Selection of cold cuts/ sliced deli meats you can heat in the micro

    Pre-washed, pre-cut vegetables for salad: cucumbers, baby carrots, baby tomatoes with dip too

    Rotisserie chicken from store cut up for salads or sandwiches

    Cubed cheeses, various whole grain crackers

    Chicken salad: either store-bought or prepped from rotisserie chicken

    Canned or cold-stored soups: chili, clam chowder, cream of mushroom

    Pre-washed and/or pre-cut fresh fruit or frozen fruit left out in the am to thaw

    Dried fruit for snacks

    Leftovers great for lunch would include pasta casseroles (like tetrazzini, mac n cheese, spaghetti) and stews

    And keep a very large container for liquids with you so you don't have to get up to refill as often.

  • Lean Cuisines, left overs, delivery, soups. All of which we are low on right now. Blahh...Looks like today will be egg rolls..
  • Left overs usually...Been working on a big batch of Chicken and Dumplings lately! 

     Egg Salad Sandwich with chips, baby carrots and hummus:  High in protein which is good for baby's growth and membrane strength!  

    Canned soups

    Frozen dinners- a big frozen lasagna makes lunches for at least a week!

  • Answering as a graduate because after 3 days of cereal, I really needed something different!!! These are also great for the first few weeks at home with the baby :)

    My SIL made various casseroles, soups, pasta, enchiladas and froze them in individual servings. My mom was great about coming over in the afternoons and putting together snack packs (baggies of cubed cheese, crackers, trail mix, popcorn, etc) so that I could just go into the kitchen, grab one and head back to the couch. My mom also put together the ingredients for crockpot meals and froze them in big freezer bags. Even though all I was doing was dumping frozen stuff in the crockpot, dinner was done when DH got home and it really helped us both feel better about me being stuck on the couch all day! We always made enough so that I would have leftovers for at least 1-2 lunches.

  • gosh...in 7 weeks of bedrest it has changed a lot!  i like the suggestions of what others are doing:  here's some that i have done.

    - turkey/cheese sandwich with pretzels and apple

    - tuna melt, chips, pickles and fruit

    - LEFTOVERS!  (good thing i love them - cause this has been mostly what i have)

    - tacos that i can easily assemble and heat up quick 

    - friend made me a huge pot of minestrone soup that i heated up for a week!
