I noticed your ticker says one day to go!  Did you try the eggplant parmesan yet??  Just wondering if there's any progress!

  • My ticker's messed up-- My due date is actually Thursday. I haven't tried the eggplant parm yet-- I'm kindof afraid to-- I'm not a big eggplant fan, and have you seen that recipe?!? It's rather complicated.

     But I officially start maternity leave at 12:00 noon tomorrow. Woohoo.

  • Ahh...I never notice anymore since I cook a lot, and hubby is an awesome cook who makes things 10 times more complex than I do all the time. 

    Oh, here's the easy way. Slice the eggplant in 1/2" discs.  Salt on both sides, and sit it on a rack to kind of drain for a half hour to an hour.  Dedge in seasoned flour, dredge in beaten eggs, and back into flour to fully bread.  Then, fry it up in hot oil.  Next - open a jar of your favorite pasta sauce, and cook your pasta.  Put the pasta on a plate, add sauce, put some eggplan on op, toss some parmesan on top of that, and there you have it.

    I don't like eggplant, but I don't mind it cooked that way.  Actually, I'll eat it just after it's fried that way - I love it  Not sure if it would have the same effect, but who knows!

  • I'm going to the farmer's market tomorrow with my mom. I'm hoping to find some eggplant there. I'm going to try that recipe! LOL. You convinced me.

    We're like bunnies when it comes to the sex thing. I'm not convinced that it works. *sigh*.

  • What does eggplant taste like? My H is Italian so he'd probably like this alot but I'm worried I'll hate it. Is is similar to zucchini and squash maybe?

  • When making eggplant parm you barely taste the eggplant.  I've eaten it fried too, and again I don't really taste it much, just get the texture and seeds.  I've never cooked it myself though, but plan to someday considering I'm also Italian.

    It's not like squash at all, maybe a bit like zucchini.

  • I can't say that when you fry it, it really has much of a flavor at all - it's more the texture.  Um...and I can't think of anything to compare it to.  But hell - just about anything tastes good fried!!!  LOL

    (And my husband is so mean, he made fried oreos and fried candy bars a few weeks back.  Oh I'm going to get into SO much trouble at my OB appt today!!!)
