I've looked around online and can't find exactly what I'm looking for...but do you think this would work:
Bread and cook thoroughly the thin sliced chicken breasts. Cook the pasta and mix with sauce and put in the bottom of a pan. Layer the chicken on top, add some more sauce, skipping the cheese, and cover with plastic wrap and foil. Then when we're ready to bake it, put the cheese on so it can melt? Do you think that will work, or will the chicken dry out?
I'm making chicken parm for dinner tonight so it wouldn't be much extra work to try this, but I'm afraid it won't freeze well and I'll be disappointed when we are supposed to eat it at a later date.

I'm not sure if it would work with a whole chicken breast, hopefully someone else can answer you. The breading might also get kind of soggy as you warm it up later.
I have an awesome chicken/beef/pork casserole (We call it spaghetti casserole) recipe that freezes and heats up like a dream. It almost tastes better out of the freezer than it does fresh sometimes. ;-)

I do freezer chicken parm this way.
Bread the chicken
Baggie of sauce
Baggie or slices of cheese in separate bag.
Put it all in one freezer baggie.
I cook the pasta day of - it just takes up too much space in the freezer and is easy enough to do.
I bake the chicken for about 20-30 minutes, then add the sauce for another 10, then the cheese until it melts.
