So we're approaching our first anniversary and I am so excited to eat the top tier of our cake (I didn't get to eat any at the reception). So it's frozen, how long in advance should I take it out.
I would think probably like a week (in the fridge). I don't know for sure though. We didn't save ours...we ate it the week after the wedding before we went on our HM.
Hmm, I'm trying to remember what we did... Our anniversary was on a Sunday, and I think I put the cake in the fridge to defrost on Friday. Make sure to let it sit out at room temp for at least a couple hours to soften up before you eat it. I hope it tastes good!

LOL! So did we! My husband loved our cake and he said he couldn't wait a year to have more!
Ugh be careful....we got totally sick trying to stick with this tradition, as did my assistant. I've been telling my bride clients just to order a mini re-make of their wedding day cake and avoid stomach issues!!
I think we put ours in the fridge about two days before our anniversary (we went away so we used a cooler till we got to the hotel). It was delicious! I keep telling my husband that I would like another one just to eat on a regular basis!
Ours gave us instructions, but they make you a free recreation of your top tier on your one year anniversary so we did not save our cake. Can't wait until August to have it again.
DH and I just had our wedding anniversary in November, we put the cake in fridge a day before and it was fine. We had cake at our reception, well the little bite that we exchanged after the first cut, and it was sooooo good. When we ate our top tier it was pretty good but it was tooo much, but it tasted perfect, I couldn't finish mine though too much buttercream frosting.
My dad dropped our cake outside when he was putting it in his car, so we just ordered a mini-cake from our baker for the 1 year anniversary. I'm sure it tastes better too.

I personally LOVE frozen cake, but if you leave it out for an hour or two, it should thaw out for you.

This is what I would think. Cake has the same consistency as bread so I would assume just a few hours should be plenty to defrost it.
