I took out some chicken for dinner tonight and am drawing a blank. Could go for some good oven fried chicken though, anyone have any good recipes to share?

take corn flakes and powdered ranch (be careful not to use to much b/c it can be over powering) and you spray the chicken with pam and then roll it in the mixture. You can bake it but I prefer to cook it on the stove top with some olive oil!

I use an Ellie Krieger recipe that my husband and I love . . . .
I prefer to use chicken cutlets instead of boneless breasts, but it's up to you.
In one bowl combine Panko breadcrumbs and cornflake crumbs. Season to taste (salt, pepper, cayenne for heat, or a little ranch powder).
In a sep bowl whisk one egg white. I have used just egg white, and I've also mixed the egg white with one small container of Fage Greek yogurt and some dijon mustard. I find the egg white alone works fine and simplifies it.
Coat the chicken in the egg white, then dredge in the crumb mixture. Place on baking sheet and spray with Olive Oil cooking spray. Cook on 350 degrees for about 15-20 mins depending on thickness of chicken.
Note: I don't spray the cookie sheet because I find it makes the underside too mushy (vs cripsy). At the end of cooking, I run the chicken under the broiler just for a couple of minutes to really crisp it up - but be sure to watch it bc it can burn quickly.

This recipe is soooo good, I've trie a lot of oven-friend chicken and this is ABSOLUTELY my favorite!
