In a Food Rut---need some new recipes

I'm trying to think of some new recipes to make and i'm in such a rut!! I prefer recipes that dont have a million ingredients in them :) I love thiings with italian sausage (Dont have many recipes for these kinds of dinners though) and also Mexican themed but I'm totally open to anything that doesn't involve pork cuz i'm not a big fan...so please share some yummy recipes!

  • We had Italian Sausage last night.  I brown the sausage and then throw in minced garlic and chopped spinach (I just get frozen spinach, microwave it according to directions and then throw it in).  While that is all simmering, I cook rotini , drain, add in some olive oil then combine everything in one pot.  It is so easy, quick and delicious.

    And I just got this email the other day and it has some good ideas in it (the baked potatoes with shredded BBQ chicken - yum)

    yum!!  we nix the canned chicken and use the meat from a rotisserie at Harris Teeter.  We've also used their turkey meat in this soup...yum!!!  we use rotel for the last ingredient.

  • I'm a pretty lazy cook. hehe. It must be easy for me to make it on a week night. But here are a few things that stay in our standard rotation. Not really recipes, just things I've thrown together :-)

    Beef stroganoff--brown beef tips on all sides with chopped onions. Add a can of reduced fat cream of mushroom soup and 1/3-1/2 c reduced fat sour cream. stir together and simmer until beef is cooked through. Serve over whole wheat egg noodles. I've done this with chicken too, which is also yummy.

    Cheeseburger macaroni--cook 2 cups of macaroni (I use Barilla plus), drain and set aside. brown 1 lb lean ground beef or turkey with 1/2 of an onion, chopped. Drain fat (or leave it, up to you). Add one can of petite diced tomatoes, drained. Add cooked macaroni, stir. Add cheese, about 3/4 c shredded (cheddar, taco style, whatever. I use 2% cheese--Sometimes I use the cheese packet from a box of Annie's mac & cheese instead). Stir until well blended and cheese is melted. Top with 1/4 cup (or so) additional cheese.

    We make Shake & Bake chicken nuggets often. Just cut up boneless chicken breasts in large chunks, shake, and bake. hehe. I made a knockoff version of "Chick Fil-a Sauce" that is good with them--light mayo, a bit of honey mustard, and a bit of BBQ sauce.

    Baked fish (flounder, tilapia, perch, whatever white fish on sale).. sprinkle with salt & pepper, and toss in garlic seasoned bread crumbs. Bake according to fish package, about 20 min on 400. I usually hit it with the broiler at the end because I like it to be crispy.

    We also use shake & bake to make chicken parmesan--I use thin chicken breast cutlets for that. Bake chicken, serve over spaghetti w/ jarred spaghetti sauce

    Pizza rolls--unroll and separate canned crescent rolls. spread each with a little pizza sauce, 2-3 turkey pepperoni slices, and 1/2 a slice of mozerella cheese (you can use shredded, but it's harder to keep the cheese in when rolling them up). Roll them, and sprinkle with garlic powder & grated parmesan. Bake according to crescent roll directions. Serve with Ceasar sala.

    Lettuce wraps--I'll usually use grilled chicken that I've made the day before and chilled, sliced into strips. But that pre-cooked bagged stuff would work too. I toss it with coleslaw mix (just the cabbage & carrots, not coleslaw dressing. I also like broccoli slaw, but DH doesn't), thinly sliced onion, toasted sesame seeds, and light Asian dressing (Newman's Own is good). I usually use Romaine leaves to wrap the mixture in, because they're "sturdier", but any lettuce will work. I also put rice noodles in them for a bit of crunch. I put those on right before rolling up the wrap, as adding them to the mixture would make them soggy.

    HTH! As you can see, we're not very fancy. But I'm ok with that. :-)

    ETA: Oh, and we don't use Italian sausage much, but last week I cut up and browned turkey smoked sausage, and made a box of Annie's mac & cheese, then mixed them together. Lazy, yes. But yummy. And very warmly received by the toddler. hehe.  Served it with some broccoli (which no one ate but me, but it made me feel better.)

  • Try Finding Joy in My Kitchen. She's got a lot of great, easy recipes and I've found that if I don't have an ingredient, I can usually leave it out or substitute.
