Hey girls I need your help with getting a few meals together. I have a friend who is on bedrest for the next 4 weeks and would like to take her a few meals so that she can have something home cooked instead of take out. She also has a 5 year old so it would need to be something sort of kid friendly. I'm thinking pasta dishes or maybe some other simple ideas.
I need something that I can freeze and/or will re-heat easily. Tomorrow I'm taking her their first meal over which is baked spaghetti.
I would also love a great chicken salad recipe for her so if you have one and wouldn't mind sharing it I would greatly appreciate it.

One of our quick meals is Chicken spaghetti
1/2 box spaghetti (about 2 c)
1 can cream of mushroom
1 can chicken broth
1 large and 1 small can chicken drained
1 small jar pimento with juice
1 1/2-2 c cheese (we use either mild cheddar, colby jack, or the mexican mix without spices)
Combine in casserole, bake at 350 for 1hr or until not runny. Can save some of the cheese to sprinkle on top.
ETA: Just made this sloppy joe recipe last night too, it's fantastic, but I'd use half the chili powder or it's kinda spicy. It freezes really well too, I make all 3 lbs and freeze it in batches.
The chicken salad recipe i use is Paula Deen's - I think it is called Jamie's chicken salad. You should be able to find it on food network. I make a few substitutions but it is fantastic.
Lasagna (I use Giada's recipe) is a good freezer recipe. How about chicken enchiladas in a casserole pan?
Ingredients:
4 cups cooked, chopped chicken
2 hard boiled eggs, chopped
1 cup celery, chopped
1/4 cup diced onion
3/4 tsp salt
1/2 tsp celery salt
1/3 tsp white pepper
Dash of red pepper
2 tbsp lemon juice
3/4 cup mayo
Paprika
Cherry tomatoes
Combine the first nine ingredients in a large bowl. Fold in mayo, then chill for at least two hours. Sprinkle with paprika and garnish with tomatoes when ready to serve.

Also, don't forget about breakfast casseroles too. When I had Sawyer, people brought me meals, and I especially appreciated the breakfast.

Chili, soups, pasta, casseroles, enchiladas.
I made some freezer meals for my DH's bosses wife who is on bedrest too. They have an 18month old and she said so far he has enjoyed all the meals I've made. I did 2 pans of baked ziti, 2 pans of Three Cheese Chicken Enchiladas and 2 chicken pot pies. Here are the recipes I use. For the ziti and enchiladas I just freeze before baking. For the chicken pot pies I actually bake them then freeze. HTH!

3-Cheese Chicken Enchiladas
Ingredients:
- 8 flour tortillas
- 10 oz. can of enchilada sauce
- 4 oz. of cream cheese
- ? cup sour cream
- ? tsp salt
- ? tsp ground cumin
- ? tsp pepper
- 2 cups shredded chicken (about 3 large chicken breasts)
- 2 cups shredded Monterey jack cheese
- 1 cup cheddar cheese
Directions:
Baked Ziti
Ingredients:
- 1 container of ricotta cheese (about 10 oz., not the large one)
- 2 bags of shredded mozzarella cheese
- 1 box of ziti style noodles
- 1 jar of favorite spaghetti sauce (I like trad. Preggo)
OPTIONAL:
- 1 lb. of lean ground beef or ground spicy Italian sausage
** if you are going to make ? pan no-meat and ? pan w/ meat you only need about ?- ? lb of ground meat**

Chicken Pot Pie
Ingredients:
- 1 cup potatoes diced (usually 1 large potato is enough)
- 1 cup chopped onion
- 1 cup celery diced
- 1 cup chopped carrots
- 1/3 cup melted butter
- ? cup flour
- 2 cups chicken broth
- 1 cup half & half or heavy cream
- 1 T house seasoning (this is a paula deen thing, its just a combo of Salt, pepper and garlic powder))
- 4 cups cooked chicken, cubed
- 2 pre-made pie crusts (found in grocery store usually near cinnamon rolls and yogurt)
Directions:
1. Preheat oven to 400?
2. Saut? onion, celery, carrots, and potatoes in butter for 10 mins.
3. Add flour to saut?ed mix, stir well and cook 1 min., stir continuously
4. Combine broth and half & half
5. Gradually stir into veggie mix, cook over med. Heat until thick & bubbling
6. Stir in house seasoning and chicken, stir well
7. Roll out 1 pie crust, lay in pie tin or pie glass
8. Pour in mix, cover with other pie crust, pinch around edges to seal, poke a few holes on top to let the steam out
9. Put pie tin on a baking sheet and bake in oven for about 40-50 mins or until pie is brown
