Roast, potatoes (peeled and chopped), carrots, 2 packs (when I make a large roast) of brown gravy mix (mixed with water as directed), some chopped onion, salt, pepper and cook all day. I usually use a beef roast instead of pork because we like it better. I also use stew meat (beef too) sometimes for less work afterward (less cutting). It usually is falling apart when it's time to eat. I have a friend that doesn't put the vegetables in it, but cooks it with cream of mushroom soup and serves it over rice.
Chicken breasts in diced tomatoes, tomato sauce and chopped carrots (odd yes, but super yummy). serve over rice.
Chicken breasts in cream of mushroom soup (usually add a 1/2 can of milk too). On low, may cook quick because there isn't a lot of water/gravy. Serve with rice or mashed potatoes.
I think those are my go-to recipes. Can't think of any others right now.

I've started doing this crock pot chicken and noodles - and its actually very good.
I usually cook the noodles ahead of time, then stick them in the fridge, and have DH throw them in the crockpot and stir them until they are warm
