What can I make in my crock pot using the 3 chicken breasts in my fridge that have been defrosting but I keep putting off making bc DH keeps tempting me with Chipotle?
I am a pro at chili in the crock pot but really have never done chicken. DH claims that he doesn't like chicken but I can usually appease him if it is Mexican or cheesy.

I have a really good recipe for Chicken Tortilla Soup.. Here it goes
2-10 ounce cans of Rotel tomatoes and chiles
1-29 ounce can of tomato sauce
2-15.5 ounce jars of salsa - your desired temperature
1- 4 ounce can green chilies
2-15 ounce cans black beans
3-4 chicken breasts
sour cream, cheese and tortilla chips to top
You put all of it in the crock pot, stir until combined, cover and cook on high for 3 hours, then reduce to low for 3-5 more hours, then shred the chicken breast and serve with sour cream, cheese and chips.
I have made this several times and is always a hit. I will also say that depending on how many of you, you are feeding, you may be able to cut the ingredients in half. I have also eaten this after only 4-5 hours of cooking so not certain it really takes the 6-8 hours suggested. Hope you enjoy!

Easiest.recipe.ever!!!! This one came from PirateGirl. We LOVE it.
Chicken
1 jar of salsa
1 packet taco seasoning
Water (however much the taco seasoning packet calls for)
Cook it all day on low and with about an hour to go (of 8-9 hrs cooking), use a fork to shred the chicken and then continue cooking for an hour.
We eat it in tortillas but it would also be really good over rice.
