I love the name Mae and want to use it if baby #3 ends up being a girl.  With such a short name, I think it would be good to use a 2-3 syllable middle name.  Some ideas:

That's my middle name! I have a long first and last name, though. I agree you should do something longer for a middle, like Katherine. I'd probably stay away from something beginning with a vowel, since it might not flow with the "ay" sound on the end. And I'd do something classic to compliment the first name.
