Its going to be informal, a game night of sorts. I'm hosting it for a group of DH's friends from his MBA program (to give you an idea of the crowd).
sooooooooooo... I'm going to make sure I have a large case of cold beer and I've decided on making Pioneer Woman Cinnamon Rolls for dessert. The most important item, dinner, is still rock tumbling in my empty skull. Suggestions???

Its going to be informal, a game night of sorts. I'm hosting it for a group of DH's friends from his MBA program (to give you an idea of the crowd).
sooooooooooo... I'm going to make sure I have a large case of cold beer and I've decided on making Pioneer Woman Cinnamon Rolls for dessert. The most important item, dinner, is still rock tumbling in my empty skull. Suggestions???
Mmmm...can I come over? DH has an MBA, does that get us an invite?
I like doing stuff I can make ahead and reheat or that can cook on it's own like a soup or something in the slow cooker. That way you aren't in the kitchen doing anything when people are there. Last time we had people over I made pork tenderloin in our slow cooker, and roasted pumpkin soup-I just roasted a pumpkin and pureed it with cream and some spices, then served it garnished with lime juice, creme fraiche (or sour cream works) and some pumpkin seeds. It was really good! I made the soup ahead and just heated it up on the stovetop right before we ate.

The slow cooker is a brilliant suggestion! I didn't even think about doing something which would help me to stay out of the kitchen.
Two more things:
1 - You owe me a Pumpkin Soup recipe, it sounds awesome, don't tease

I don't really have a recipe...I just kind of make food up as I go along. But, if you can find a pie pumpkin-they're kind of a rarity after the holidays, just cut it in half, scoop out the seeds and roast at about 350 for an hour or so (there should be directions on the pumpkin-but just go as long as it takes to get soft enough to scoop). If you can't find a pumpkin you can do the same recipe with butternut squash. I would do 1 pumpkin for every 2-3 people you want to serve.
When it's all done roasting, scoop it out and put it in your food processor (or you could use a hand/immersion blender or a regular blender) and mix with heavy cream-again no recipe but you can add it in until you get the consistency you want, it will depend on how much soup you want and how creamy you want it. Then just spices to taste-I used salt, pepper, cayenne pepper, a little tumeric, and a tiny bit of cinnamon.
Then just squeeze like a teaspoon of fresh lime juice on each bowl right before you serve-makes a huge difference on flavor-and add a dollop of creme fraiche/sour cream and pumpkin seeds (out of the shell, obv-they're good for fertility so that's a bonus!).
Phew that was long but it's really pretty easy, minimal ingredients and not that much work, but it seems impressive when you serve it
