Will and Dash have decided that purees are for babies and not big boys like them, which meant I had a cupboard full of apple- and pearsauce to use up (I made all their other purees but they preferred those from the store, and since I could get them without any additives/sugar it was fine with me).
I decided to make some applesauce muffins for their breakfast but had a hard time finding a low sugar recipe that still sounded tasty. I tinkered with and combined several recipes to make this, and it's pretty good - Ben and I have been eating them for breakfast as well.
You could probably remove the sugar altogether, but I like the tiny sweetness tempering the tart applesauce.

Almost No Sugar Banana-Applesauce Muffins (makes 12)
1.5 cups flour (can use regular or whole wheat)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup brown sugar
3 bananas, mashed
1/2 cup applesauce (can change this to 2 cups if not using bananas)
1 egg
1/3 cup butter
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon ginger
Heat oven to 350F/190C. Prepare a muffin tin with grease or papers.
Mix together dry ingredients and set aside.
In a separate bowl, beat butter and sugar unti smooth, then add egg and vanilla. Stir in bananas and applesauce.
Combine wet and dry ingredients and mix until well blended.
Spoon into muffin tins and bake 18-20 minutes or until a toothpick inserted in the middle comes out clean.

I cobbled it together from a few different recipes I found online, and I don't think any of them had that info (a few were on blogs, etc.).
What do you need to determine the info? If you go to caloriecount.about.com and sign up for a free account, you can enter all the ingredients and tell it to make a meal - the software breaks it down into calories, carbs, fat, vitamins and minerals, etc. I don't know if that would help?
Yum, yum! Sounds delish. I gotta use up a jar of organic applesauce that we got for Libby (she also prefers firmer foods...although she'll spoon feed herself cottage cheese or yogurt with wild abandon!)
Congrats on reaching the table food milestone with the pirates! So fun, huh? What are they eating these days? Libby's favorite thing is mushrooms..in any form! I gave her a small slice of pizza on Sunday and she just picked all the mushrooms off and left the cheese and bread behind. Too funny!

Just about anything lol! The only thing they don't seem crazy about is bell pepper, which I don't blame them for - I hate it, myself.
Other than that, they'll eat just about anything. They're especially fond of cheese and pasta (although they're iffy on bread), and although they haaaaaaated pureed peas they enjoy eating whole ones. Go figure!
We haven't tried them on mushrooms yet - we're pretty much just giving them whatever we eat, and we haven't had any mushrooms in dishes yet.
I have to say, this whole solid feeding thing is SO much easier now that they're not being spoon fed any more! Although I should still work on teaching them to use the spoon themselves...
