favorite easy chicken (drumstick) recipe please

I plan on making classic baked chicken with wild rice & steamed veggies. But I was wondering if anyone has any other suggestions.  Thanks!

Another question, am I the only one who starts planning dinner at 7am? I take out my meat to defrost and do any prep work during the afternoon nap. So I like to plan ahead. I find my night goes WAY smoother if dinner has already been planned before 4pm

  • A lot of us plan our meals for the whole week on Saturday or Sunday.  Look below for the weekly meal post.

    I also do most of my prep in the afternoon (unless I am doing a crockpot recipe which is done in the morning).  dinner prep time is still a sort of witching hour in our house and the less I have to do, the better. :)

  • LOL, no I usually start planning dinner when I get up, too (or the night before!).  I LOVE chicken drumsticks, and I always make them super easy-- I either

    A). Sprinkle salt, pepper, garlic powder, and onion powder and bake at 350 for about 40-45 minutes

    B) Do the above AND sprinkle bread crumbs on top (SO SO yummy)

    or

    C). Peel/Cut 2 potatoes into cubes, dice up a whole onion, salt/pepper to taste, add EVOO so they don't dry out (maybe 2-3 tbs), and then put the chicken on top, and do the same as A (spice the chicken and bake for 40-45 at 350)

    In the summer we sometimes marinate them in a light bbq sauce but that's reserved for outdoor grill cooking.
