I flew with a very active 7 month old. On the first flight it was just the two of us so I splurged on Business class (it was only $49, tho, with Air Tran) so we'd have more room.
On the way back DH was with us, and it helped that DS could move back and forth between us.
Besides the things you mentioned, each plane trip (DS and I have been on 5 to date, only one with DH) I've taken at least one walk up and down the aisle, just for a change of scenery. I've also spent a good amount of time in the bathroom so that DS can see himself in the mirror while I dance around and sing to him. I sing to him a LOT on flights, usually very quietly, right in his ear.
I also gave him animal crackers for the first time on the last flight. That was a big hit.
