Meatless meals Help

I need good meatless, kid friendly, fish/seafood free meals.  I know this is far off but I need to get ready for lent.  DH is Catholic.  This is the first year the boys are really eating.  We are a fish/seafood/ PB free house due to allergies in the kids.  The pedi told us to stay away from all that til age 4.

in the past I have done lots of

breakfast for dinner

rice beans and tortillas 

DH would cook himself fish and I would eat  something else

boca burgers 

 

I would like to give DH and the kids some variety this year.  HELP

  • We do a lot of Mexican/Latin food....sweet potato and black bean burritos, black bean patties with pineapple rice, breakfast burritos (with eggs, pinto beans, peppers, onions, guac, cheese, etc.), and green chile cheese enchiladas. We also use soy crumbles to make pasta sauce or taco fillings and eat soy chicken nuggets. Roasted veggie pizza, grilled cheese (or other veggie sandwiches) and tomato soup, and vegetarian chili are also favorites.

  • Eggplant or large mushrooms (like portabellos) can be used as a meat subsitute in a number of dishes.

    We eat a lot of pasta with meatless sauce -- traditional marinara sauces, baked pastas, pasta with cheese sauces.

    Stir-fry using veggies, rice, and/or noodles.

    I'm a huge salad fan, DH, not so much.

  • My first thought was something like lasagna.  

    You could also make an Asian-style sauce in big batches (we make peanut sauce, but there are lots of other sauces out there), freeze it in 1 C portions, and then put over soba noodles with steamed vegetables.  We eat chicken, but you could easily just do tofu.

  • When we go meatless, it usually involves pasta -- veggie lasagna (I have a great recipe if you're interested), spinach and cheese stuffed shells, or cheese (or mushroom) ravioli.  I also like vegetarian chili, and I've made a few risotto recipes that are meatless (one is a baked one with asparagus and spinach -- very hearty).  Also, beef/bean burritos are delish!
