I wouldn't even notice, unless you started calling your son Ellie (just kidding)! I grew up with an Elliot and he went by that normally although people called him El or E sometimes.
We're naming our LO Elliott as well The only nn I have in my head is El, and even then we probably won't call him that until he's quite a bit older. Plus, kids will have their own nn's for each other, so I figure we'll stick with Elliott and let his peers decide on something else if they want.

I think Elliott is an awesome name, and it doesn't need a nickname.
I wouldn't veto the name because the dog has a similar nickname, but I would start calling the dog by her full name. Elliott and Ellie is a bit weird, but Elliott and Lady Eleanor is perfectly okay. The dog will get used to it.
My name is Jasmine and when I was a little girl we got a new dog, we named her Jessie, but after a couple of weeks we had to change her name because "Jessie" sounded too much like "Jazzie."! So I would say if you love the name Elliot, maybe start calling the dog by a variation of Eleanor that's sounds even more different, maybe Ella?
Either way, you might end up having your son AND your dog come running every time you call, which isn't necessarily a bad thing LOL!
Doesn't show up on my crazy radar. It's not like your dog is Elliott/Ellie. My daughter has an E name, and I'll call her E every once in a while (mostly when I type). Otherwise, I'd let the nick name come on its own. You might be surprised with what you end up...one of my kid's nick names is Munch.
Re: would we be crazy
its ok, but I would just call him Elliot not a NN. IMO
I wouldn't worry about it.
I don't think you need to decide on a NN until you see what fits your LO's personality.

Not a problem to have Ellie and Elliott, IMO. Sadly, the dog will not live forever.
And I would call him Elliott. It is a cute name and really doesn't need to be shortened.
