Place unpeeled garlic in a baking dish. Lay chicken on top, rub with a little olive oil if so inclined. Pour in 1/2 cup of white wine, add a little thyme or tarragon. Bake at 350 until golden brown and delicious. Spread roasted garlic on good bread.

If you don't mind using canned stuff, you can brown it in butter, and simmer, covered, in a couple of cans of mushroom cream soup with about a 2 cups of milk and a generous dollop of sour cream, until cooked through. I also throw in large carrot chunks and spinach, or any other green vegetables. It's one of my recipes from college and although it's definitely not very healthy, my family loves my "creamy chicken," and it's one of the few recipes I have for bone-in breast. I serve it over white rice.
PS, is that the big Lego Duplo pirate ship you have in the background of your sig?? It looks similar but not exactly like the picture on amazon. I've been trying to find it for TB for his bday in late Feb, but the prices are all close to $500. Do you mind telling me if you got it recently, and for somewhere closer to retail, which I believe is $100? I can't tell if the outrageous prices are due to it being discontinued, or simply currently out of stock. TIA!
