Pregnant after a Loss

Does anyone have a good egg bake recipe you would like to share?

We've decided totally last minute to invite my family over to join us Christmas day (even though we will be spending all day tomorrow with everyone at my parents place). Since we are expecting my fam around 11, I won't have time to make a bug breaky like I typically would. I don't want to have to rush Christmas with the girls so that I can make breaky, get everyone fed and still have time to get some stuff ready for my fam to come. Thought if I could throw together some ingredients for an egg bake tomorrow night, I could prep as much as possible tomorrow so I can just throw something in the oven when we start opening presents on Sat morning. The ingredients I have on hand are eggs, sausage, potatoes, onions and peppers...among many other things. Anyone have a suggestion?

  • This is what I'm planning on making.  You need 1 lb. sausage, 6 eggs, 2 cups milk, 1 tsp salt, 1 tsp dry mustard, 2 cups cheddar cheese, and frozen shredded hash browns (partially thawed).  I'm sure you can add or omit whatever you'd like.  Spray a 9x13 and spread hash browns in the bottom.  Bake at 350 for 15 minutes.  Let cool.  Beat eggs, milk, salt, and mustard together.  Layer the following on the potatoes - cheese, sausage, then pour mix over it.  Cover and refrigerate overnight.  Bake uncovered at 350 for 40 minutes the next morning.  It's super easy and yummy.

  • I just made this for a brunch we hosted last weekend and it was good.  There was tons leftover and we had 6 adults over.  I will say that I had to add a little hot sauce for more flavor though.

  • I actually hate egg bake, but a co-worker made this one and something about it being spicy made me like it :)

    Sliced Bread - crust removed
    Butter
    1 pound bob evans hot sausage
    1-1/2 cups shredded cheddar cheese
    6 eggs, beaten
    ...2 cups Half n Half
    Dash of Salt

    Spread bread with butter. Place in a greased 13x9" casserole or just butter both sides.

    Crumble sausage into skillet. Cook until no longer pink.
    Spread over the bread.
    Sprinkle cheese over sausage

    In a bowl, combine eggs, half n half, and salt. Pour over cheese.

    Cover and chill overnight
    Preheat oven to 350. Remove casserole from refrigerator and let stand at least 15 minutes to warm to room temperature.

    Bake uncovered until set, about 45 minutes. Serve warm.

  • if you go to www.cookinglight.com and do recipe search for "strata" - I love all of them. I've done a bunch, you can prepare ahead, and just pop in oven. so good.
