I have made: biscotti w/ chocolate, cranberries, and pistacchios, simply sugar cookies, macaroons, and chocolate chip log cookies dipped in chocolate and walnuts.
I need one more to make- something not too hard and not redundant with what I already made.
Or should I just make some more sugar cookies??

There just like rice krispy treats but with cornflakes. We've made these for years with my grandma and they are super easy. I'm making some tonight and hopefully I won't eat all of them!
Lace cookies? Festive, easy, and the recipe makes a ton. Even better if you sandwich them with chocolate

This is what I posted last year for the TTCAL cookie recipe exchange:
Giant Chocolate Sugar Cookies
1 1/2 cup flour
1/2 cup cocoa powder (unsweetened high quality Dutch--or can just use regular cocoa powder)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) butter (unsalted, sweet)
1 1/2 cup sugar
another 1/2 cup butter
1 large egg
1 1/2 teaspoon pure vanilla
1. Preheat oven to 375. Whisk together flour, cocoa powder, baking powder, and salt in medium bowl.
2. Put 1 stick butter and sugar in mixing bowl with paddle attachment. Mix med-high until pale and fluffy. Mix in other stick of butter, add egg and vanilla, mix until creamy. Reduce speed to low, add flour mix, until just combined.
3. Use 2 1/2 inch ice cream scoop, drop batter on cookie sheet. Bake for 18-20 minutes.
