This is the first year I am not roasting a turkey or ham. What do you think? Should I make another veggie?
I will definitely have another app- would chips and guac be weird? My sis works at an awesome mexican restaurant so I could have her grab that and some fresh salsa.

I think it sounds good. My family usually has a less traditional Christmas dinner. Not many of us like turkey and the sides are the main attraction.
We usually do stufffed veal chop or lamb of some kind.
To answer your question I would probably have a second veggie. Or maybe a really good homemade mac and cheese with an italian breadcrumb topping.
Appetizers- guacamole and chips doesn't work with shrimp and brie
Dinner - You 100% do not need another veggie. You have artichokes, green beans, salad and even peppers in the sausage. Enough
