If I make a prime rib roast for Christmas Eve..

What kind of potato would you make? We normally have a big dinner with my side Christmas eve and his side on Christmas day. I am having Christmas eve and don't feel like a regular turkey so I think we are going to have a prime rib roast, and maybe a fried turkey. What kind of potatoes would you have? Thanks for any suggestions!

  • I always make twice baked potatoes because I can make them the day before and just do the twice baking the day of.  So much simpler.

    I put lots of butter, sour cream, and shredded cheese in mine, and then top them with bacon and more cheese.  Everyone loves them!  If you are too lazy (like me) to put them back into the potato skins, that's okay.  Just stick it in a casserole dish and heat it back up in there. 

  • Mashed potatoes or baked potatoes
  • Loading the player...
  • I usually do a rib roast for Christmas .  I make either garlic or loaded (cheese, sour cream, bacon) mashed potatoes.
  • Twice baked! YUMMO... now I want some!

  • We make dry aged prime rib for New Year's for our friends and do parsley, garlic, butter baby reds.  They are super easy boil the baby reds and then add to a baking dish with butter, minced garlic, and chopped parsley and bake for 15 min until butter is melted and mix before serving.
