I'm a part of a local organic fruit/veggie delivery service and lately, it seems like a lot of the veggies are spoiling very quickly.
I'm noticing, often, that my sweet potatoes have these white spots on the inside. They look fresh and good on the outside, are firm to the touch... but when I cut them open, well, see the pic below.
Is this mold growing on the inside? Or is it normal? I've never noticed it on sweet potatoes before, but maybe I'm being paranoid since a lot of the stuff is going bad so quickly....
If it makes a difference, after I took this picture, I left the piece out. About an hour later, those white spots were black.
