Eco-Friendly Family

Help, need an alternative to butter in cookies.

I'm making some oatmeal cookies and I only have one stick of butter left. It calls for two. If I can't find an alternative I'll cut the recipe in half, but I'd rather not. Suggestions? I don't have applesauce if that is an option.

  • Crisco or Crisco like alternative?  I try to only use it when necessary but if you're in a bind...  (I would still use the butter and make up the difference with the Crisco)

    Hopefully someone else has a healthier alternative :-)

  • coconut oil (yum!) or crisco (ew, but it works). you can try just canola oil too but you will probably get very flat cookies (i have a vegan recipe that uses just oil and that's what i remember about their texture).
  • Coconut oil (best alternative) or olive oil will work as long as you are using eggs and sugar in the recipe. Otherwise it'll be more shortbread like in texture.

     I don't have anything apparently! haha I'm putting all these on my grocery list. We haven't done a huge pantry grocery run in months. Looks like I know what I'll be doing this week! Thanks for the ideas. I'll have to make half batch this time.

  • lol do you have ANY oil? even olive oil will work. else the half batch is a safe bet. i usually just eat half the dough anyway.

  • applesauce.  i use it in place of oil and butter.
