I need some more crockpot recipies. I know of KA's chicken tacos and then there's another with Chicken, cream cheese, pace salsa, etc. What other recipes are yummy? Thanks!

I got this recipe from Oprah's show where she had Jessica Senfield on with her new cookbook. I am vegetarian so this lasagna was right up my ally so I made it last night and it was awesome. Simple, and so so good!
3 cans crushed tomatoes (I could only find the giant cans, so I used 1.5 cans of the giant cans at Randalls). 3 cloves garlic (I chopped it up very fine) 2 T oregano 1/2 t kosher salt 1/4 t red pepper flakes 1/4 t black pepper 2 containers fresh ricotta 2 c grated mozzarella (I used a little more than 2 cups because I sprinkled it generously over the top of the lasagna at the end... so I'd plan on almost 3 cups). 1/4 c grated Parmesan 12 lasagna noodles 5 oz baby spinach
combine tomatoes, garlic, oregano, salt, red pepper, and black pepper in a separate bowl, mix ricotta, mozzarella, and Parmesan in slow cooker spread layer of sauce top with four noodles. (I had to break a few of the noodles to smaller to fit in my crock pot).
spread almost a cup of sauce over noodles layer with spinach and cheese mixture repeat this step twice top with remaining noodles, sauce, and mozzarella cook on low, covered for 3-31/2 hours
(I cooked for three hours in my crock pot and it was perfection).
