I just saw below that these are your latest obsession.
I made some for Nat's party last weekend and they didn't turn out so well. I was attempting the Hello Kitty one on Bakarella's site. She said to put them in the freezer to speed the steps along....but once they started thawing out, they started sweating and then the cake mixture expanded and started oozing out by the lollipop stick and cracking the chocolate. Needless to say I have about 40 sad-looking kitty cat heads in my freezer that weren't suitable for guests.
So what do you do/how do you do yours? Do you just keep them at room temp the entire time?
I'd like to make some for DS's preschool Christmas party in a couple weeks, but don't want to end up with a similar issue.

Sorry, totally butting in here. I found I?m most successful when I make the balls and let them sit in the fridge for an hour or two to harden. Then, I take them out, put the sticks in the balls and dip them immediately. The chocolate will harden and keep the sticks in place. That?s always my biggest problem?keeping the damn balls on the sticks.

My first time making them they turned out horrible and had way too much chocolate on them. They've improved a lot though!
Last time, I made the cake the day before and cooled the cake completely before crumbling it and mixing it with frosting. Then I made the balls and left them in the fridge overnight (I don't think overnight was totally necessary, but it helped). Then I did what Bakerella recommends and took the tray of balls out, dipped the ends of the sticks in chocolate and stuck them in the balls. Then I put them back in the fridge for the chocolate to harden (I think this step was key in keeping the balls on the sticks while dipping).
Then I took the cake balls out of the fridge one or two at a time and dipped them in the chocolate, let the chocolate drip off and then stuck them straight up in a styrofoam egg carton in the fridge to harden.
I really think that this way worked the best and I found that the more I did them, the better they turned out.
