I usually see that in reference to Goodmamas or other OBV (organic bamboo velour) diapers... hard to explain if you're not familiar with OBV, but it starts out super soft, often described as "silky." As you wash it more and more, it gets less soft, kinda matted down, and eventually gets to be what is called "sherpa."
I had some very heavily used GM's that I would describe as "sherpa," but they were still fine, very usable and not even super rough or anything, just definitely not as soft/silky as brand new.
Some people prefer sherpa-y diapers because they are supposedly more absorbent.
