I'm trying to figure out what to get DS's teacher for Christmas. I'm thinking a gift card may be the best but want to make sure that is a welcomed gift for teachers. I'm sure they get a lot of gifts that they aren't thrilled with.

I go the gift card route with all teachers. I also include a hand written note of appreciation to them, this year DD will write her own, and I will write one for DS.
I was a teacher and always appreciated a GC and hand written note. FWIW I was not a huge fan of anything home baked, or teacherish (somethign with #1 teacher or an apple).
DD's current school does a collection for a gift in lieu of individual gifts, but I still get something for the classroom as well: a new book or puzzle. If they didn't do the collection I'd do a gift card for the teacher + the classroom gift.
I used to be a preschool teacher and appreciated gift cards. It is something I could actually use. A restaurant, movie tickets, Target, bookstore...any other those are good in my opinion.
I'm doing a giftcard to a Christian Bookstore (he attends a Christian preschool), and buying a couple things for the room - I asked for a list of a few things she'd like for the room.
I asked Ben a couple weeks ago what she would want and he replied, "Well, she does not need anything. She has everything she wants." It was so funny - and I could totally tell that she has already told the kids what to say when their parents asked them.
Gift cards (ideally somewhere generic like Target or other department store or even a grocery store that then sells other types of gift cards - can use the gift card to get a card for the store of their preference) and a genuine, handwritten note

Any gift cards are great! I get a lot of gc to a book store that is way out of town, though, because it sells at a stand in our grocery (barnes and noble - but we only have a borders.)
I love starbucks, target, wal mart, wegmans, anything - especially a coffe place if you know she likes it, because it's a luxury, and places where I can buy stuff for the classroom, like wal mart.
I loved any gc, but especially ones that allowed me to shop for something just for me, like mall gc, target, barnes and noble, dsw (LOVE that one!), kohls, etc
