How about roasting some of the zucchini and squash for dinner. Then shredding the rest of the zucchini and freezing it (I did that with a bunch of mine from our garden this summer).
Then for the cranberries, I would try out the PW Nantucket Cranberry pie. I'm making it this week at some point! I'm also making her cranberry sauce with pom juice as well.
I find huge zuchs very seedy, and I don't dig that. I use a mandolin with the thin julianne blade to shave it into long strips of "spaghetti", sautee in a little olive oil and toss with pesto. It was the only way I could eat the gigantic zuchs we kept finding hidden in the gaarden this year.
That sounds yummy! Which reminds me I need to find a good vegan pesto recipe...

Hmmm....I just had a thought...
Do you think I could add some of the zucchini & cranberries along with some wild rice to this dressing recipe?
And then I'll just make butternut squash soup tonight for dinner!
