Photogs, what's the best way to convert a photo to B&W?

I have Photoshop and am trying to convert a color photo to B&W. It's for H's birthday invitation so I'd like to make it look nicer than just using the Grayscale option. I'm reading varying opinions online. TIA!

    The easiest way is to go to image, adj, desaturate. That will take it to BW. then you can play with curves (ctrl M) to adj the brighness.
