Stuffing or Not?

Do you stuff your turkey to roast it???   We're at an impasse.

  • No. I make cornbread dressing using a recipe passed down from my great grandmother.

  • No.  It's terrible for you -- loads of bacteria.  I make dressing on the side.  I do stuff the bird with herbs, onions, garlic and the like but not with actual stuffing.

  • Will you come tell my SIL, then!  She looked at me like I had 3 heads when I told her I didn't plan to stuff my turkey.  Now it's like WWIII around here and she's fighting me on every little menu item.

    Go to the Food Network site  for Thanksgiving.  Alton Brown has a little blurb on there about why stuffing is AWFUL for you.  And he is THE man when it comes to the science of cooking.

  • all of the cooking shows I have seen say don't stuff the turkey with stuffing  because it keeps it from cooking evenly (makes it dry and germy). One guy poked holes in some lemons and I think an orange and shoved that up there instead. It made the turkey look nice and 'fluffy" and kept the legs close to the body.

  • I used to, but stopped once I discovered brining.  I miss it, but yeah, it's a total bacteria culture in there.

  • I know what they say, but I still think stuffing tastes better cooked in the bird!  That said, we've cooked it separately for the past few years.  I noticed one of the pp posts said to look at Food Network - yes, Alton Brown - anyway, I was surprised to find that many of their turkey recipes still mention stuffing the bird.  GL with SIL!
  • I am a huge AB fan and am all ready to do a roasted bird with the aromatics inside, etc.  But the SIL just scoffs and says, "Well, I've been making turkey for years with stuffing in it and no one's died."  ARGH!

    I'm about to pull the "I bought it, so I'm doing it my way" line.

  • Get her a little game hen, she can stuff that and eat it instead of the turkey.  :)

  • Much to my dad's chagrin, I'll be roasting the dressing and not stuffing the bird with it. The risk of bacteria creeps me out. If he doesn't like it then he can make the dressing himself Stick out tongue

    This.  Well, not me personally, since I'm not much of a cook, but this is what DH does.
