If you make your own sushi?

What kind do you make?  I normally make a roll with avocado and cucumber.  But I'd really like a more traditional california roll.  I have no idea what kind of crab to put in there?  I'm also open for ideas on good sushi roll ingredients.  DS is feeding me "sushi" right now out of his puzzle pieces and I could definitely go for some of the real stuff right about now.

  • we make california rolls, kappa rolls (cuke), avacado rolls, dynamite rolls, tuna/salmon maki, etc...

    We just use imitation crab for california rolls.  Most sushi restaurants here do the same...

  • I'd LOVE to make some California rolls at home, but have never tried it.  Talk to me about rice - what kind, how do you cook it, etc??

  • I do smoked salmon, veggie roll, tuna if it's fresh and California rolls, I  use the fake crab b/c  most sushi places do and I'm allergic to crustaceans.

    You can get sushi rice in some regular grocery stores or at an Asian market.  This is the recipe I use:

     

    • 2 cups sushi or short grain rice
    • 2 cups water, plus extra for rinsing rice
    • 2 tablespoons rice vinegar
    • 2 tablespoons sugar
    • 1 tablespoon kosher salt

    Directions

    Place the rice into a mixing bowl and cover with cool water. Swirl the rice in the water, pour off and repeat 2 to 3 times or until the water is clear.

     

    Place the rice and 2 cups of water into a medium saucepan and place over high heat. Bring to a boil, uncovered. Once it begins to boil, reduce the heat to the lowest setting and cover. Cook for 15 minutes. Remove from the heat and let stand, covered, for 10 minutes.

     

    Combine the rice vinegar, sugar and salt in a small bowl and heat in the microwave on high for 30 to 45 seconds. Transfer the rice into a large wooden or glass mixing bowl and add the vinegar mixture. Fold thoroughly to combine and coat each grain of rice with the mixture. Allow to cool to room temperature before using to make sushi or sashimi

  • I bought a bag of grade A sushi rice and followed the instructions on the bag.  Make the rice in water.  After cooking add vinegar and let cool enough to make sushi.

    Oh man this is really making me want some. I'm going to go take a shower and get ready to go to town and get some california rolls and cucumber avocado rolls. YES!

  • for those that use salmon/tuna - where do you find it?  if you're doing raw fish it has to be special 'sushi grade' right?  i've never seen that anywhere..

  • Anytime we made homemade sushi with raw fish we bought our fish at Whole Foods and just asked the fish monger if it was sushi grade and he/she would direct us to what we could use.  We also lived in the Bay Area at the time, so we weren't as worried.  I would call so local seafood shops and ask if they carry "sushi grade."  That is my plan for after this baby comes, because we are inland now I don't want to make it at home while still pregnant (it is just a little too scary).

    Just like pps - we use fake crab in the cali rolls.  I think we might have used real stuff once or twice, but it really was hardly a difference.  there were packages close to the fish area at the grocery store of crab sticks.

    We mostly make veggie rolls at home, though I have used sushi grade fish (I think I asked the guy at the fish counter at Publix which fish were sushi grade and was surprised that the salmon and tuna were - I don't know if that depends on your location or not).  Our favorite veggie rolls from the sushi restaurant we go to have sweet potato in them - sliced pretty thin, cooked enough to make it soft - mixed with some avocado and cucumber or you could cook carrot strips the same way.  DH also likes asparagus (I would cook that a little first too).
