I recently found a new brand of oatmeal that is so delicious. Its called "MMM Muffins". DS thinks it smells really good too and always acts like he wants some, but then chickens out (i think the texture looks weird to him). Anyway, I thinking of trying to make muffins with these oatmeal packets since I think DS would eat it that way. Anyone have a recipe you'd recommend?

I wouldn't try to make muffins with instant oatmeal packets, unless maybe you left the sugar out of the recipe. There may be other ingredients that would screw up the chemical reaction that makes them rise.

Yes, I know it may flop, but I think its worth a try. I agree the sugar may need to be adjusted, but other than that, there are very few ingredients in this brand and nothing that seems like it couldn't go into muffins, so I want to give it a shot. I honestly can't believe how good this stuff is since its pretty healthy.
I make oatmeal muffins, but I don't think I would try it with oatmeal packets (like Lari said).

I use butter instead of oil, and add additional bananas, oats, and flaxseed. It's yummy. I'm sure it would make decent muffins, too.
