For us, it's our boy that is more mellow. Our girl is definitely more high maintenance, although our son can be a whiner, while our girl is a screamer!! lol

In the beginning/newborn phase, DS was definitely the easier and much more mellow baby. Now that they're both mobile and almost one, I've noticed that DD has mellowed out and DS is a little more complicated. (He just can't sit still and gets into everything.) I don't know if it's gender or temperament, but I'm sure they'll keep switching it up to keep us on our toes for the next 17+ years.
ETA: DS1 was seriously the easiest baby/newborn ever. So in our experience, our boys have been easier in the beginning.
My son has always been more high strung than my daughter. From the minute they were born! He was also smaller and had digestive issues, which I think fed into his crankiness as an infant. Now he's such a sweet boy, but definitely knows what he wants and isn't afraid to cause a ruckus to get it! My daughter has always been very chill... from day one.
