I'm making my grocery list for the next week. I'm so sick of eating sandwiches. What kind of things do you eat for lunch? I'm looking for simple or minimal cooking. DH works from home so I make lunch for him too. So far all I could think of is pasta salad.

Yogurt parfait: Plain yogurt, fresh fruit of choice (strawberries, rasberries, or blueberries for me), and granola. Easy to make and yummy!

Tuna fish salad: tuna fish, a little bit of olive oil, lemon juice, green peppers, & fresh cilantro
My mom made up that tuna salad and I love it! Sounds weird, but it takes good and refreshing.
Lately? Halloween candy... and maybe some string cheese for protein ;-)
Normally, leftovers from the night before mixed with a fresh salad or some other random thing I have on hand (chicken salad, avocado/tomato sandwich, etc.)

This week some of the things we had were pasta and steamed veggies, chicken-stuffed croissants, homemade pizza, green chile chicken enchiladas... all easy prep, longest cooktime was 20 minutes baking.
For the croissants, we just buy the refrigerated dough and roll up a spoonful of cream cheese, a small spoonful of salsa, and chopped cooked chicken and bake according to the dough instructions.
The enchiladas are chopped green chiles, cooked chicken, and melted cream cheese as the filling with green enchilada sauce and shredded cheese on top. I've started using canned chicken for the enchiladas since DD was born because its so much faster to prep.

I found some spinach chips that are great with hummus - snap peas too
frozen meals/individual pizzas
I bought some pimento cheese the other day that was darn good with saltines and celery, pickles and cherry tomatoes.

with DD I often just eat deli meat rolled up, cheese slices, veggie sticks/dressing and fruit/berries, maybe a few chips and crackers
burritos with shredded store-rotisserie chicken, canned black beans, cheese and pico/salsa
(for the record, these are things I frequently put on my TO EAT/MAKE list - I often fail)
