I've had high blood pressure for about 2 weeks now and headaches but no proteinuria and so far don't have pre-e. But they decided to put me on modified bed rest this week for the remainder of my pregnancy (1-1.5 weeks unless I go naturally). I am allowed to get up to shower, use the restroom and eat something ready made, but not cook. I do have a few meals frozen for after delivery but most of them are not the most GD friendly and/or not entirely finished and require fresh veggies etc. To become a full meal. And in general id rather not touch those meals yet. DH will be doing this for me and he's a decent cook. So what are some ideas that I can have him make for me that at most only require some reheating. Pasta is tricky, I dont always have the best numbers afterwards and it's tedious for DH to measure everything so perfectly. He works 60 hours a week though, so even though he's capable the simpler the better.

Crock pot meals. That's what MH has been doing while I'm on bed rest. There are tons of recipes online. I had him make a huge batch of brown rice at the beginning of the week and then we had different crock pot meals with it. Most were chicken dishes and don't require a lot of work at all.
I was going to suggest the crockpot too. If you want to change it up, have him grill on the weekend or when he has a little extra time.
One of our fav meals that works really really well for my gd and still keeps so happy is grilled steak, asparagus, and some kind of potato. I'll usually do a sweet potato and he gets a white potato. Last night I did asparagus and red potato foil packs for the grill.
white chicken chili in the crockpot
1/2 bag of tyson frozen chicken tenders, can of cannelini beans, mccormick white chick chili seasoning pack, sour cream, monterey jack, corn chips
put the chicken and seasoning mix in the cp along w/ the water called for on the pack. when it's done cut the chicken and toss it back in the pot w/ the beans. let it sit for a few min to heat the beans and cool the chicken. top w/ sour cream, cheese, and crushed corn chips
so loves this too and i just don't use as many chips.
I don't know if this is considered cooking since it only takes a minute to prepare, but I've been eating a lot of peanut butter and banana sandwiches on low carb bread. Also stir fry is a really easy thing for your DH to make - just buy a bag of frozen stir fry veggies and some chicken and cook it on the stove with some soy sauce, or sometimes I'll use the Asian Vinaigrette or Ginger Sesame dressing. It's delicious and takes only a few minutes. Just serve over some brown rice (instant is super easy and takes only about 7 minutes). We've also been eating a lot of eggs, which are another very fast thing to make. Sometimes we buy the Jimmy Dean Scrambles in the freezer section of our grocery store which comes with cut up potatoes, onions, peppers, etc., and either sausage, ham, or bacon. All you do is add 6 eggs and scramble together. It takes about 10 minutes and it's filling and delicious. As the girls above mentioned, the crockpot is also a great fast and easy way to make good meals. Just stick a whole chicken in your crockpot with some carrots, potatoes and celery and some chicken broth and let it cook all day. That will feed you for a couple of days and takes only a few minutes of preparation. It's just as easy with a beef roast. My DH and I also eat a lot of soups. We'll make a big batch over the weekend and it will last us most of the week. We just made chili with low-carb whole wheat noodles, but I also make this delicious Southwest Fajita soup, which is really fast and easy to make:
1 lb. ground beef, 1 onion, 2 cans black beans (drained & rinsed), 1 can kidney beans (drained & rinsed), 12 oz bag of frozen corn, 1 packet of taco seasoning mix, 1 packet of ranch seasoning mix, 1 packet of fajita seasoning mix, 3 (16 oz) cans of petite diced tomatoes, 1 can of Italian diced tomatoes.
Brown the beef with the onion, drain. Add the rest of the ingredients and heat until boiling. Serve with sour cream and shredded cheese (my DH likes to eat it with tortilla chips, too, since it's such a thick soup). 1 generous cup is about 15 grams of carbs.
This is one of my favorite recipes and my DH loves it too. A whole pot will last us almost a week.
