slow cooker/crock pot

Share your favorite recipe please. MIL bought me one last week when she was visiting. Never had one never used one. Want to use it not sure were to start.

    One of our go-to weeknight meals is pork tacos.  We put pork loin in the crockpot with a jar of green chili sauce and cook all day.  Then we make soft tacos w/ tortillas and all the fixings.

    Another similar recipe is bbq pork for sandwiches.  Pork loin + bottle of bbq sauce + crockpot = yummy meat to put on buns with some cheese.

    Chicken Taco Soup:

    • 1 onion, chopped (I do the prechopped from the produce section, I can?t stand to chop an onion!)
    • 1 (16 ounce) can chili beans
    • 1 (15 ounce) can black beans
    • 1 (15 ounce) can whole kernel corn, drained
    • 1 (8 ounce) can tomato sauce
    • 1 can chicken broth, regular or fat free
    • 2 (10 ounce) cans diced tomatoes with green chilies, undrained, like Rotelle
    • 1 (1.25 ounce) package taco seasoning
    • 3 whole skinless, boneless chicken breasts, you can use frozen chicken (I do!)
    • shredded Cheddar cheese (optional)
    • sour cream (optional)
    • crushed tortilla chips

    DIRECTIONS

    1.    Before you go to bed, place the onion, chili beans, black beans, corn, tomato sauce, chicken broth, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook all night.

    1. Get up in the morning, turn off crock pot, use to forks to break up the chicken - sort of shred it, break it into pieces.  By the time you go to work, the crock pot will still be hot but should be cool enough to put in the fridge, and then you have a nice supper to come home to.  It will probably be easier to reheat in individual soup bowls than the whole crock pot.  Or if it?s the weekend, start the process early in the morning and you?ll have a piping hot supper by evening time.  Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

    I just add some stew meat (maybe one lb or two, whatever the package comes with), onions, baby carrots, potatoes cut into big chunks, zuchinni, etc, and a packet of stew seasoning (found in the seasoning aisle with the taco seasonings) and maybe a cup of water.  (The seasoning packet has directions you can follow).  It cooks all day and is so good.

    You can do a pot roast very similarly.  Find the pot roast packet and follow the directions.  I make it with almost the same things as the stew, except leave out the potatoes, make mashed potatoes, and use the leftovers juices for gravy.

    cook on low for 8 hours and I have served on rice, mashed potatoes and egg noodles.  Really easy and good.

    A couple easy favorites of mine are:

    BBQ Chicken, put a couple chicken breasts in on high 5 hours with a little chicken broth or water, once they're cooked shred them and put in a bottle of BBQ sauce. I then leave it on low with the lid off for an hour or so. We like it on hoagie rolls and DD goes crazy for the chicken.

    Salsa Chicken- chicken breasts, a tub of salsa and cook on low 8 hours or so. We put the chicken on tortilla's with cheese and black beans.

     Mushroom Pork Chops- 4 pork chops, a can of cream of mushroom soup, some mushrooms (canned or fresh) a cup or so of white cooking wine, salt and pepper. Cook on low 8 hours.

    I love cooking a whole chicken in mine and it's super easy. 

    Spray the crock pot with Pam. 
    Put whole chicken in (remove the packet that in the chest cavity.) 
    Sprinkle some of your favorite seasoning on the top (I like a garlic/herb mix) 
    Cook on low all day while you are at work (8-10 hrs)

    You can add a couple of cups of water while cooking if you want more broth, but it still makes a lot of liquid without it.  I use it all week for meals--chicken and rice, chicken and dumplings, quesadillas, tacos, chicken alfredo or spaghetti.

    Easy Chicken and Noodles

     Put a large carton (32oz) or 2 if you like a more brothy soup, a can of cream of chicken soup, a pound of chicken, and carrots, onions, and celery in the crockpot on low for 8-10 hours.  (I buy a bag of frozen diced carrots, onions, and celery when in a hurry).   When you get home, cook a bag of Reamer's frozen noodles using the package instructions.  Stir into the crockpot mixture and serve. 

    If made thicker, serve over mashed potatoes.  If thinner, serve as a soup with crusty bread.

    Thai Beef is a great easy one ...

    Put in 1 1/2 pounds of flank steak (cut into strips), baby carrots, and 1 jar Thai Sauce of your choice (we use a Peanut one ourselves).  Cook on low for 8 hours.

    20 minutes before serving add snow peas and any other veggies you like that don't require a lot of cooking.  Just before serving add 1/2 cup coconut milk.

    I LOVE crockpot chicken tacos:


    3 Large Chicken Breasts (I use frozen ones)
    2 cans black beans, drained
    1 can red beans, drained
    Salsa (1-2 cups, i would guess)
    1/2-1 tbsp Cumin
    3-4 tbsp Chili Powder
    1/2 tbsp black pepper
    Frozen corn (optional)

    Put chicken in the crockpot and all other ingredients on top of it. Cook on low for 3-5 hours until you can shred the chicken. Serve on a tortilla with mexican fixings. Enjoy!

     

    And my favorite super-easy recipe is for chicken tortilla soup. Dump in:

    1-2 cans chicken (or chopped leftover chicken if you have some on hand)

    1-2 cans black beans

    1-2 cans corn

    1-2 c. salsa or 1 can diced tomatoes

    1 packet taco seasoning (or I dump in my own seasonings--Emeril's Southwest Essence and some onion and garlic powder)

    4 c. chicken broth--more or less depending on how soupy you want it.

    If you have more time, you can add some sauteed onions and garlic, and/or cilantro at the end.

    You can cook this on high for a few hours or on low all day. Since the chicken's pre-cooked, it just needs to be heated through. Then crumble tortilla chips in a bowl, ladle in the soup and add shredded cheese on top. You can serve with chips and salsa, guac, whatever floats your boat.

    I always cook on low.  Normally put everything and leave it while I'm at work all day, but 6 hours or so would probably be plenty.  I use sliced cheddar.

    We love making chicken enchiladas! Couple of chicken breasts, onion, green pepper, taco seasoning, and a little water. Cook on low for 6 hours. Then stuff them in tortilla shells, cover with cheese and enchilada sauce, and bake for about 20 minutes in a  375 degree oven. Serve with rice-and don't forget the sour cream!

    You can spend hours online finding yummy recipes to try=) Allrecipes.com has so many. The crockpot website has a ton, too, and it list them by crockpot size, which is nice.
