Ethan had his first field trip the other day and he wants me to make a pumpkin pie with the pumpkin he picked. I've never done this before. I have a good cream cheese pie crust recipe. Just never did the pie itself before. How big should a pumpkin be? It's not too huge but it's not a teeny one either.

It says to use a pumpkin about 6 to 8 inches across, because the smaller ones tend to be sweeter. If your son got a large jack-o-lantern pumpkin then just add a little extra sugar.
Fastest and easiest way to soften the pumpkin and separate it from the rind is to put it in a steamer basket on the stove. It only takes about 10 to 15 minutes.

The first one I ever made, I made from a jack o lantern pumpkin. They are really stringy, so I had to run it through the food processor to make it smooth. And I added honey because it wasn't very sweet. I had boiled the pumpkin and it was kind of soggy and I had to squeeze out a lot of water. I think it would be easier to bake the pumpkin instead of boiling. Or maybe steam it.
Despite all that, it turned out tasty!
