You asked about fool proof pumpkin seed roasting? Here is what I do:
I melt about 1 Tbsp butter (more or less, depending on amount of seeds, or you can use olive oil too) and pour over seeds. Then I spread them out onto a cookie sheet lined with parchment paper. Then I sprinkle whatever seasoning I want (salt, garlic salt, or even cinnamon & sugar) over the seeds. Roast at 275 for 10-20 minutes, until seeds have a golden-y look.
