need pie recipies

So for Thanksgiving, DH and I are in charge of pies for dinner at his dad's house.  (I know this is WAY in advance, but I can't wait for a week of Thanksgiving break- teacher here! and I'm bored tonight.)  So I don't want to purchase pies and I'm pretty handy in the kitchen, so post a link or a recpie of your fave!  TIA!

Re: need pie recipies

  • I made this last year and it was a hit! I'll probably repeat again this year.

    Have fun!

this takes a little bit of work but you said you're handy in the kitchen...amazing!

    That looks AMAZING!

  • Apple Cranberry Pie

crust:  I usually cheat and use a box mix for crust like pillsbury (and follow whatever directions are listed on the box)  Had one bad experience making it homemade and never looked back!

    filling:

4 to 5 tart apples sliced thin** (1 tablespoon lemon juice, see below)
    1 cup sweetened dried cranberries
    1/2 teaspoon ground cinnamon
    1/3 cup all-purpose flour
    1/4 cup packed brown sugar
    3 tablespoons butter or margarine

**peel and slice your apples. soak them in water with a tablespoon of lemon juice. this will prevent the first apples cut from turning that brownish color...

heat oven to 400?F. in medium bowl, mix apples, cranberries and cinnamon. next mix flour and brown sugar. with pastry blender or fork, cut in butter until mixture resembles coarse crumbs spoon pie filling mixture into warm baked shell cover pie with crust bake 35 to 45 minutes crust is golden brown after 5 to 10 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. cool at least 30 minutes before serving.

    mmmnnnn.....now i want pie :)

it's delicious! I made it last year for thanksgiving and it was a big hit!

  • This is everyone's favorite at Thanksgiving. I know the cheese crumb topping sounds weird- but it's delicious!

    Down Under Apple Pie

6-8 golden delicious apples (yellow apples)

    1 c sugar

    2 tbs flour

    1 tsp ground cinnamon

    1/8 ground cloves

    1/8 salt

Combine sugar, flour, ground cinnamon, cloves and salt in a small bowl. Toss apples in mixture and arrange apples in the bottom of an uncooked pie shell (I always buy the frozen pie shells). Dump the rest of the unused mixture on top of all the apples in pie shell.

    Topping:

    1 c flour

    1/2 c sugar

    1/4 c grated cheddar cheese

    1/2 c melted butter

Mix together and crumples with fingers over the apples.

Bake at 400 degrees for 40 minutes.

    Enjoy!

  • This is my "granny's perfect apple pie" recipe. The crust is a PITA, but I usually cheat if I dont have time in the crust and go buy a Mrs Smiths double pie crust, let it thaw and cut the extra crust to make a lattice top pie. ONLY use the Mrs Smiths though, the Pilsbury sucks.

     Filling:
1 cup of sugar (the secret is to use 1/2 cup of brown and 1/2 cu
    p white)
    1/4 cup all purpose flour
    2 teaspoons ground cinnamon
6 cups sliced peeled tart apples
    1 cup heavy whipping cream
    whipped cream to top

    1) Combine sugar, flour and the cinnamon; sprinkle 3 tablespoons into crust.
    2) layer with half of the apples, then sprinkle with half of the remaining sugar mixture. Repeat layers.
    3) Pour heavy whipping cream all over4) Bake at 450 for 10 minutes. Reduce heat to 350; bake for 55-60 minutes or until apples are tender.
    4) Cool on wire rack. Store in refrigerator. Serve with whipped cream or vanilla ice cream if desired.

And if you feel like it, here is the crust:

     Never Fail Pie Crust

    Single Crust Pie:

    1 cup all- purpose flour
    1/4 teaspoon salt
    1/3 cup shortening
    1-1/2 teaspoons white vinegar
2 to 3 tablespoons cold milk

    Double Crust Pie:
    2 Cups all-purpose Flour
    1/2 teaspoon salt
    2/3 cup shortening
    1 tablespoon white vinegar
5 to 6 tablespoons cold Milk

    1) In a small bowl, combine the flour and salt; cut in shortening until mixture is crumbly. Sprinkle with vinegar. Gradually add the milk, tossing with a fork until a ball is formed. Cover and refrigerate for 30 minutes or until easy to handle.

    2) For a single crust, roll out pastry on a lightly floured surface to fit a 9in or 10 in pie plate. Transfer pasty into pie plate; flute edges. Fill or bake shell according to pie recipe instructions.

    3) For a double crust, divide pastry in half so that one ball is slightly larger than the other. Roll out remaining pastry to fit top of pie plate; place over filling. Trim; seal and flute edges. Cut slits in top. Bake according to recipe directions.

I use the double recipe and do the lattice style top for the pie. I usually put a butter glaze over top for the last 15 minutes of baking.

  • Apple Pie:

Crust: (single crust recipes, obviously, double for top and bottom)

    9":

    1 cup sifted flour

    1/3 cup Crisco

    1/2 tsp salt (scant)

    3 Tbsp cold water

    10"

    1 1/3 cups flour

    1/2 cup Crisco

    1/2 tsp salt

    3 Tbsp cold water

Spoon flour lightly into measuring cup & level without shaking or packing down. Combine flour & salt in mixing bowl.  Cut with knives or pastry cutter till mixed well (uniform & fairly course).  Sprinkle water a Tbsp. at a time; toss with a fork.  Work dough into firm ball with your hand (don?t work too much or crust will be tough--if you mix it just enough, it will be really flaky and tender).

Press dough into flat circle with smooth edges.  On wax paper or lightly floured surface, roll dough to a circle about 1 1/2? larger than inverted pie plate.  Ease gently into plate.

Don?t stretch the dough.  Trim 1/2? beyond edge of pie plate; fold under to make double thickness of dough around rim and flute with a fork or your fingers.

When baking single crust without filling; prick bottom and sides thoroughly with a fork.  Bake at 425 degrees for 10-15 minutes or until as brown as desired.

    Apple pie filling:

Peel, core, and cut up 5-6 apples.    (usually 6 is good) (I recently tried this with Honeycrisp apples....sooooo gooood )

    Mix together:

2/3 C. white sugar   (3/4 C. if the apples are tart)

2 Tbsp. flour   (or 1 Tbsp. cornstarch)  (I use flour)

    1/4 tsp. salt

    1 tsp. cinnamon

dash of nutmeg  (if you have it in your cupboard)

Pour this mixture over the apples & mix thoroughly together.

Pour apples into unbaked pie crust?fill the dish well. (If pie dish isn?t mounded up with apples, cut up another one on top and sprinkle with cinnamon sugar.)

Dot with 1 Tbsp. margarine  (little blobs in 5-6 places over the apples). Lightly wet the top edge of lower crust before you lay on the top crust. Put top crust on top of the pie plate & apples, pinch edges, slit crust 6-8 times. Sprinkle top crust with granulated sugar.

Bake at 450? for 15 minutes then 45 minutes more at 350?.

  • This my all-time fave apple pie recipe https://www.bettycrocker.com/recipes/fresh-apple-pie/880b6895-4081-4c52-bbc1-ab07f721785e (although I make the homemade Betty Crocker pie crust too). I have tried a couple pumpkin pie recipes too, and my favorite is the Libby one on their canned pumpkin; it's easy and tasty. Good luck and have fun baking!

  • My Granny (Betty June)'s Chocolate Pie is ALWAYS a huge hit at potlucks. Several ppl at work even request it: 1c sugar 6T cocoa 3T flour 1/4t salt 1 3/4c milk 3 eggs (separated) 1t vanilla 2T butter Baked pie shell 1/4c sugar Bake crust at 350 degrees for 10th minutes. Combine sugar, cocoa, flour and salt. Gradually add milk. Stir until smooth. Stir continually over MEDIUM heat. Beat egg yolk. Add to cooking mixture. Stir until thick. Take off burner. Stir in butter and vanilla. Pour into pie shell. Make meringue: Beat egg whites and slowly add 1/4c sugar. Whip until stiff peaks. Pour over pie. Bake until golden. Enjoy! (And I typed this whole thing on my phone...so that tells you how good it must be!)
