Im leaving in 30 mins for the store since I have nothing in the house for lunch or dinner. I have no clue what to get for dinner. I looking for something sort of easy.
Lasagna. It's already prepped and ready to go. I don't use them, but I saw at the grocery store that the starting making the no-boil noodles for lasagna... it might be worth a shot!
Do you like spicy food...this is VERY spicy although you can adjust the chili paste to taste. Also, I double everything to make the sauce. You can make it with chicken, beef, pork or tofu. We had it last night-super fast and easy!
8 oz udon or rice noodles 1/2 cup fat free less sodium chicken broth 1/4 cup peanut butter 2 tbspn low sodium soy sauce 1 tbspn chile paste with garlic 1/3 cup thinly sliced green onions 1 tbspn minced ginger 2 garlic cloves minced 6 oz ground pork
Cook noodles according to package and drain Combine broth, peanut butter, soy sauce, chile paste and stir well with whisk. heat skillet over med/high heat, coat with cooking spray. Add onions, ginger and pork to pan. Saute 5 minutes Add garlic saute 30 seconds Pour broth mixture into pan, bring to a simmer and cook 1 minute until slightly thickened. Pour over noodles and toss
If it gets too thick i always add extra broth. The longer it stays in the pan the thicker it gets so if you get distracted just add more broth. This seriously takes about 15 minutes and if one of my favories. Another cheap recipe....I think it feeds 4
I use the no-boil noodles in my lasagna, and I love it! They are just the same in the end. But tonight I'm making home make chicken pot pie! I've been craving it and I'm finally doing it tonight! Yummy!

I agree! I hate that my DH is anti almost every vegetable! He only eats green beans, peas and carrots. Drives me nuts!
I might try this one though...he can eat around the spinach!
I'm making this- from another nestie. However, I am skeptical as crockpot dinners with chicken make me nervous. I'm never really thrilled with them. But I have a backup of tortellini and pesto if it's a huge fail.
3-4 chicken breasts
1 jar salsa
1 can black beans
1 block cream cheese
1 can or bag of corn
Put chicken in with salsa - make sure salsa covers the chicken. Cook
all day (I used frozen chicken even), then, 45 minutes before serving
put in the black beans (drained and rinsed), corn and cream cheese. We
served with homemade Spanish Rice which is easy.

It's also a Cooking Light recipe from a few years back so I always feel good about eating it! Plus it's one of DH's favorite dinners!

I'm probably too late, but we're having chicken tortilla soup and cheese quesadillas. They're easy, but a little time consuming. It's worth it, though! So good! I made ours last night because DD has soccer tots tonight, so DH and I eat later when we get home.

That's great to know. I should mention that we can't use them because DH has Celiac's disease, but that's great to know for when I am making a pan for someone else.

No clue about tonight but last night I made spaghetti and meat sauce with a ton of garlic bread.
Now that I think about it though, turkey & bacon clubs with soup sounds really good for tonight!
Potato and Cheese soup or Chicken Fajitas. Whatever my husband decides to make while I'm in grad school class.
omelets (spinach, mushroom & swiss for me, ham & cheddar for H) with roasted new potatoes and salad.
We went to Paris last year and got omelets with salad, and ever since I've been hooked, lol. It's so strange and yet so right.
