We have so many apples from going to the orchard the last few weeks and I'm getting tired of making the same old thing (PW's Apple Dumplings). I've considered making some apple pies and freezing them. I still may do that, but I'd like some other recipe ideas as well. Does anyone have any favorite apple recipes that I should try?

Apple Enchiladas With Cinnamon Vanilla SauceTasty apples are cooked on the stovetop with butter, brown sugar, and cinnamon then used to fill egg roll wrappers. Pie crust would make a more tender wrap for the apples, but the egg roll wrappers are so quick and easy.
Ingredients:
? 8 egg roll wrappers
? 6 apples, Golden Delicious, peeled, cored, thinly sliced
? juice of 1 small lemon, or 2 tablespoons
? 1/4 cup butter
? 1/3 cup brown sugar, firmly packed
? scant 1/2 teaspoon cinnamon
? 1 tablespoon cornstarch
? melted butter
? 1 tablespoon granulated sugar mixed with 1/4 teaspoon ground cinnamon

? Cinnamon Vanilla Sauce
? 1 cup sugar
? 2 tablespoons flour
? 1/4 teaspoon cinnamon
? 1/8 teaspoon nutmeg
? 1 cup cold water
? 2 tablespoons butter
? 2 teaspoons vanilla extract
Preparation:
Toss apple slices with lemon juice. In a large skillet, melt 1/4 cup butter over medium heat; add sliced apples. Sprinkle with the brown sugar and the 1/2 teaspoon cinnamon. Cook, stirring, until apples are tender. Mix cornstarch with a few teaspoons of cold water then mix into apples. Continue cooking for a minute or two.
Spray with nonstick butter flavored cooking spray or butter a 11x7-inch baking dish. On a large plate, lay out egg roll wrapper. Spoon a little of the apple mixture down the center. Brush ends lightly with butter then fold ends over each other, forming a roll. Lift and quickly move to the baking dish, placing each roll seam-side down. repeat with remaining 7 egg roll wrappers. Remaining apple mixture will be baked around the egg rolls, so there is no need to over-fill them. Brush tops of the filled wrappers with melted butter. Spoon remaining apples all around the edge of the rolls. Sprinkle with the sugar and cinnamon mixture. Bake in a 350? oven for 20 to 25 minutes.
Apple spice cookie bars! I have made these twice already!
Ingredients:
2 c. plus 2 Tbsp all purpose flour
2 tsp baking powder
1/4 tsp salt
2 tsp ground cinnamon
1/8 tsp nutmeg
1/8 tsp allspice
small pinch ground cloves
1/2 c. butter, melted
1 c. packed brown sugar
1 c. white sugar
2 eggs
1 Tbsp vanilla extract
2 apples, cored and diced (a little less than 2 c.)
cinnamon sugar for sprinkling
Directions:
-Preheat oven to 350 degrees and line 9?13 pan with foil and baking spray.
-In medium bowl, combine flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
-Whisk to combine well and set aside.
-In bowl of stand mixer, combine sugars and butter and beat on medium high until light and fluffy, about 1 minute.
-Add eggs, one at a time, beating well to combine.
-Add vanilla extract and beat to combine.
-Turn mixer on slow and fold in flour mixture a little at a time until just combined.
-Fold in apples.
-Spread mixture evenly into prepared pan and sprinkle top generously with cinnamon sugar.
-Place in oven and bake until cooked through, when top slightly bounces back to the touch, about 30 minutes.
-Remove from oven and let cool completely before removing from pan, cutting and serving. (bars will be very soft)

Apple Dessert Pizza
Slice apples, lightly saute in butter/cinnamon/brown sugar/pinch of salt until the apples are just starting to soften.
Spread them on an unbaked pizza crust. I bought a dough mix from a local Amish bulk store.
Top with shredded sharp cheddar cheese.
Bake as you normally would. (My dough specified 10-12 min at 425).
Apple crisp
(I double or even triple this recipe)
2 1/2 cups apples, peeled and sliced
1/2 cup brown sugar
6 Tablespoons flour
6 Tablespoons oatmeal
1/2 teaspoon cinnamon (I like to use a lot more)
1/4 cup butter
Pre-heat oven to 400. In a bowl combine dry ingredients. Cut in the butter. Put apples in an 8 x 8 pan and cover with topping. Pat down and bake for 20 minutes.
