Both of my girls love hamburger/macaronie casserole....it's ridiculously easy, as well: hamburger, macaroni, tomatoes, corn, onions, (and whatever else you want), cheese, tomatoe soup or tomatoe sauce (or both), seasoning: Italian spice, pepper, and a bit of salt...... They gobble it up fast!!!
DD really likes one I make that just has chicken, frozen broccoli and I add cauliflower (any veggies will work) and mix with with alfredo sauce. I top it with store bought biscuit and brush them with butter and parmesan cheese!
On our meal plan for this week is Chicken & Biscuits, Turkey-Mozzarella Pasta, Taco Roll-Ups (pizza dough, taco meat, cheese, rolled into a log and baked), Ham with oven roasted carrots & potatoes, and grilled chicken and veggies.

I just discovered www.weelicious.com and it's very inspiring, am going to try it this week, bought all the ingredients I need today
Can't go wrong with soup, I use bread or powedered cereal to help thicken -- my son is at the stage where he is SO over being spoon-fed. Wants to do it all alone, but liquid are tough outside the sippy cup

Mmm this Taco Roll-Up sounds good. Do you just follow the cooking directions for the Pizza Dough as far as Oven temp/length?
Yep. The meat is already cooked when you roll it all up, so you only have to worry about the dough cooking. KWIM? We actually got the idea off the weelicious.com site PP mentioned, she does a pizza pinwheel recipe (with ham and mustard) where she slices the log before baking. We have tried several variations now, and for the taco one, we bake the log whole and then cut it up. We have also done turkey-mozzarella, pizza flavors, and BBQ chicken. All of them have been good, and they are super easy!
